Cesenatico Bellavita in collaboration with Casa Artusi, has compiled the first compendium of good Romagna cuisine, inspired by the philosophy and literary work of the gastronome Pellegrino Artusi: “The art of eating well”.

Here are the “five commandments” followed by all the hotels of the Consortium: quality ingredients – mainly DOP and IGP from Emilia Romagna or selected by small local producers – seasonal products, a passionate group of chefs, traditional recipes, the ability to welcome you and tell the story of their land through food and wine.

Traditional dishes

The list of dishes to eat in Romagna is long, so we have selected those that best characterize the territory. Starting with the piadina, our poor bread. And then we go ahead with fresh pasta stretched with a rolling pin: cappelletti and passatelli in broth, green tagliatelle and lasagna, strozzapreti, ravioli, tagliolini, garganelli. Among the main courses, the simple meat of chicken and rabbit slowly browned, the mixture of grilled Mora Romagnola and stewed snails must be tasted. Neither should you miss grilled bluefish, fish broth or the side dishes with zero food miles vegetables!

Romagna is a fertile and generous land, which gifts us products of the highest quality. Such as PDO EVO oil from the hills of Rimini or Brisighella, PDO “Fossa” cheese (ripened in special pits), from Sogliano al Rubicone, PGI nectarine peaches from Romagna, PGI shallots from Romagna, salt from Cervia and fine meats from Mora Romagnola, both Slow Food presidium members.
